What Says Fall More than Pumpkin Chocolate Chip Cookies

I had a hankering for some cookies today! Not just any cookies but some Pumpkin Chocolate Chip Cookies. I mean what says fall more than that? I looked around the internet for some ideas. I have always loved Libby’s Pumpkin cookie recipe but I just wanted to see if I could find anything better. I kind of mixed a couple of recipes together to create these scrumptious melt in your mouth perfect fall pumpkin chocolate chip cookie.

Making Pumpkin Chocolate Chip Cookie Dough

Before I started making these cookies I turned on The Great Pumpkin Charlie Brown music using our Alexa! Does it get any better than baking Pupmpkin Chocolate chip cookies that says Fall to the music from that classic Halloween movie?

I think not!

Okay on to the recipe- In a bowl mix the dry ingredients which are 2 C flour, 1 C old fashioned oats, 3/4 tsp kosher salt, 1 tsp cinnamon, 1/2 tsp ginger, 1/4 tsp pumpkin spice, 1 tsp baking soda (which I actually forgot hahah).

Then in my kitchen aid I beat 1 C butter, with 1 C sugar until fluffy. Add in 1 egg and 1 tsp vanilla, Zest of 1 orange (I really think the orange flavor brings out the flavors of the pumpkin, cinnamon and ginger) and 8 oz or half a can of Libby’s solid packed Pumpkin.

Beat until combined. Add in the dry ingredients and mix well. Add in 1 C or a little bit more of Chocolate chips. We love Ghiradelli Semi and Sweet and Dark 60% chocolate chips mixed.

Using a medium sized cookie scoop, scoop dough and place on a cookies sheet. They don’t spread a whole lot…it might be because I forgot the baking soda haha.

Bake in 350 degree oven for 10-13 minutes.

Make The Glaze

Make the glaze- melt butter and mix in brown sugar until dissolved. Add in powdered sugar, vanilla, cinnamon and milk or cream.

Mix until smooth and drips off a spoon

Once out of the oven let pumpkin chocolate chip cookies cool for a few minutes and then drizzle the frosting over the top! YUMMMMM!

Enjoy these perfect fall cookies with a tall glass of milk and watch the Great Pumpkin Charlie Brown or maybe Hocus Pocus!

Ingredients

Dry Ingredients

  • 2 C Flour
  • 1 C Old fashioned oats
  • 1 tsp Baking soda
  • 1 tsp Cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp pumpkin pie spice
  • 3/4 tsp kosher salt

Wet Ingredients

  • 1 C Butter (softened)
  • 1 C Sugar
  • 1 Egg
  • 1 tsp Vanilla
  • zest of one orange
  • 8 oz Pumpkin (Libbys solid packed)
  • 1 C Semi Sweet Chocolate Chips

Glaze

  • 1/4 C Butter melted
  • 1/4 C Brown sugar
  • 2 Tbsp milk or cream
  • 1 tsp Vanilla
  • 2-3 C Powdered Sugar
  • 1/2 tsp Cinnamon

Instructions

Cookie Dough

  • 1. Combine dry ingredients until mixed.
    2. In mixer combine butter and sugar and beat until fluffy. Add in vanilla, egg, orange zest, 8 oz pumpkin wet mix until well blended.
    3. Combine the dry and wet ingredients until well blended.
    4. Add in chocolate chips and combine.
    5. Use a Medium sized cookie scoop and scoop on to parchment covered cookie sheet.
    6. Bake at 350 degrees for 11-13 minutes

Glaze

  • Melt butter in microwave, add in brown sugar until dissolved. Mix in vanilla and powdered sugar. Add in milk and mix until desired consistency to drizzle over the cookies.
