How to make pastry wrapped asparagus

How to make pastry wrapped asparagus is a super easy recipe. This recipe is great for Easter brunch, Baby showers, Birthday parties and even Super Bowl parties because you can prep them in advance and pop them in the oven 20 min before guests arrive. One of the other awesome things about this recipe is that you can serve these at room temperature too!

Prepare the asparagus

I like finding asparagus that is not too thick or too thin. If they are super thick they end up being too chewy. If they are too thin it is hard to wrap the asparagus with pastry because they are too flimsy.

The first thing you are going to do is rinse off all your asparagus.

Then cut off the bottom parts that are usually dry and kind of a yellow beige color. One way to do this is to hold the asparagus in one hand and snap off the end where it breaks off easily.

Next you must dry off all your asparagus so that the pastry will adhere to the asparagus.

Prepare the pastry

I like to use Pepperidge Farms puff pastry that you can purchase from the grocery store in the freezer. It is super easy to use too!

You need to let it thaw to room temperature over night in the fridge or at room temperature, thaw unwrapped pastry for no more than 40 minutes.

Tip- To thaw the pastry quickly in microwave- wrap pastry in paper towel and microwave on HIGH for 15 seconds, then turn it over and microwave for another 15 seconds. If it doesn’t unfold easily, microwave for another 5 seconds on each side.

Cutting the pastry to wrap asparagus

Once the pastry is thawed it is time to start cutting the pastry into little strips. I used a pizza cutter but you can use a knife. Cut the strips into approx 1″ thick long slices.

Tip- Keep pastry covered with a dish towel to avoid drying out.

How to wrap the asparagus with pastry

Starting at the top of one or two asparagus spears, begin wrapping the pastry around and around until you reach the bottom of the spear.

At the end of the asparagus wrap a little bit of the pastry over itself to kind of seal it on the spear.

Lay each spear on a cookie sheet covered with parchment paper until they are all wrapped.

Make an egg wash for the pastry wrapped asparagus

Crack one egg into a little bowl and add 2 Tbsp water. Beat with a fork until mixed.

Brush each pastry wrapped asparagus bundle with the egg wash.

Sprinkle with shredded parmesan cheese and little bit of kosher salt for a yummy flavor.

For another option you could add sesame seeds.

Bake The Bundles

Bake the pastry wrapped asparagus bundles for 20 minutes or until lightly golden brown. Oh these are so yummy!!

I love using easy pre-made frozen pastry to make yummy goodies.

Dipping sauce

You could make a yummy little dipping sauce for these.

One idea is to mix up about 1/4 cup of mayo with a squeeze of lemon and one clove of garlic finely chopped. You can also make this dipping sauce for an Italian take on the wrapped asparagus. Mix 1/4 cup of mayo mixed with some pesto or even a marinara sauce. YUM!!

Ingredients

  • 1 Pkg Pepperidge farm puff pastry thawed
  • 2 bunches Asparagus not too thick or thin
  • 1/4 cup Shredded parmesan cheese
  • 1/2 tsp Kosher salt
  • 1 egg

Instructions

Prep the asparagus

  • Wash and trim the asparagus

Prepare the pastry

  • Thaw the pastry until it is pliable.
  • Using a pizza cutter slice the pastry into 1/2" to 1" skinny strips
  • Starting at the top of each spear begin wrapping one to two spears at a time with the pastry. At the bottom of the spear pinch the dough together and place seam side down on parchment paper lined cookie sheet.
  • Mix egg with 1 Tbsp water. Brush the egg wash over each asparagus bundle.
  • Sprinkle parmesan cheese over each bundle
  • Bake at 400 degrees for approx. 15-20 minutes or until golden.
