Seriously the easiest and best appetizer or salad using food from your pantry!
This recipe called cowboy caviar is so versatile because you can use it as a dip for an appetizer or as a side dish any time of the year. You can use any types of beans like black eyed peas, garbanzo beans or even kidney beans. Kids love this dish too!
If you don’t have any limes laying around just leave that out. Play around with this recipe to make it taste the way you would like using what you have.
I served my Cowboy Caviar with bruschetta for a delicious appetizer. I simply used two baguette loaves of bread, thinly sliced. Brush olive oil on one side, sprinkle with a little kosher salt. Place the sliced bread on a cookie sheet oiled side up. Broil the bread until lightly golden. Watch the bread because it can burn quickly.
I served the Cowboy Caviar in a bowl on a lazy Susan with the toasted bruschetta bread all around it. Everyone loved it and there was none left! You could serve it with corn chips instead of the baguette. Another fun way is to serve it is like a salsa on top of chicken or pork or how about in a tortilla with some left over chicken for a yummy taco. The best is served just as a side salad with any meal.
Keep canned ingredients on hand in your pantry so you can make this at a moments notice when guests drop in. You can keep baguettes wrapped in aluminum foil in the freezer to also have on hand.
