I made this scrumptious dinner tonight using left over Peanut Thai sauce, Turkey and Yams. You will absolutely love this quick and easy dinner.

Here is the recipe for the amazing sauce that you should probably double because it is so good and can be used multiple ways.

Peanut Thai Sauce

A flavorful peanut sauce made with coconut milk and lime
Course Main Course
Cuisine Indian

Ingredients

  • 3 Cups unsweetened coconut milk
  • 3/4 Cup Smooth Peanut Butter
  • 1/3 Cup Brown Sugar
  • 1/3 Cup Soy Sauce
  • 1 1/2 Tbsp Rice Vinegar
  • 1 small onion diced
  • 2 Tbsp shallots minced
  • 2 Tbsp garlic minced
  • 1/4 Cup Red Curry Paste
  • 1 Tbsp Lemongrass 3 stalks
  • 3 leaves Kaffir Lime or 1 tsp chopped lime zest
  • 2 Cups Cilantro minced
  • 1/3 Cup Basil Minced

Instructions

  • Cook all ingredients in a pan until heated through.

Directions for turkey and yams

This sauce and turkey topping is so versatile and can be made to top rice or pasta. You can even cut up the yams and sauté them with the ground turkey and add a can of beans and top it over the rice or pasta.

You would think after becoming an empty nester couple that our nest would be very quiet and empty but our Kottage nest is usually more full than what we started out with! You might find me hosting a birthday party or graduation party and a baby shower on the same weekend or a big outdoor get together with 25 of our friends and family in the backyard or maybe I might be in the kitchen trying out a new recipe for my hubby and I to grill on the BBQ for a quiet night for the two of us. I think I will always have a home decorating DIY project in the works as long as my hubby is on board with me haha. We have painted A LOT in the 6 homes we have owned in the 35 years that we have been married as well as re-done multiple pieces of furniture, added wall and ceiling treatments, replaced lights, bathroom fixtures and even tiled floors! I have sewn what seems like a million window treatments for our home as well as for family, made slipcovers, and duvets and even a formal dress or two!
