Gluten Free Strawberry Pie recipe With Amazing Crust!

This was my first attempt at trying a gluten free strawberry pie recipe and I really liked the crust! This crust is made using oatmeal and brown sugar, vanilla, butter and nuts. The original recipe called for walnuts but those make my lips puffy so I chose cashews instead. I am sure you could use any kind of nut for this crust recipe.

The crust recipe comes from Food.com but I changed one ingredient.

Ingredients for Gluten Free Strawberry Pie recipe With Amazing Crust!

  • 1  cup rolled oats
  • 4  tablespoons brown sugar
  • 1⁄4 teaspoon salt
  • 1⁄2 teaspoon vanilla
  • 1⁄3 cup melted  butter
  • 2⁄3 cup finely minced  walnuts (But I used Cashews)
  • Preheat oven to 350F.

Speaking of oatmeal have you ever tried fried oatmeal? It is seriously my favorite breakfast! I use leftover oatmeal that has been refrigerated and I fry it, add fruit and yogurt to the fried oatmeal. Here is the recipe.

  • Toast oatmeal in a shallow pan for 10 minutes to brown, watch carefully.
  • Remove from oven and in small mixing bowl combine oatmeal with remaining ingredients.
  • Press into 9-inch pie plate.
  • Bake crust for 10 minutes or until a golden. Let crust cool.

Ingredients for Filling

  • One box instant white chocolate pudding or banana pudding (follow directions on box) Empty box into a bowl add 2 cups of milk and mix with a whisk until pudding mix is dissolved.

  • Fill pie shell with pudding, top with whipped cream (recipe below), add strawberries and blueberries.

How to make fresh Whipped Cream

1/2 pint of whipping cream

1 tsp. vanilla

1/4 c powdered sugar

Pour whipping cream into a bowl, add vanilla and powdered sugar. Beat on high until light and fluffy. Add more sugar to taste.

Top pudding layer with whipped cream and sliced strawberries. I piled a few blueberries in the middle with a another dollop of whipped cream and a sprig of mint. It is such a pretty strawberry pie.

Ingredients for filling and topping

  • 1 box One box instant white chocolate pudding follow directions on box
  • 2 cups milk
  • 1/2 Pint Whipped cream
  • 1/4 cup powdered sugar
  • 1 tsp vanilla

Instructions

  • Preheat oven to 350F

Make Pudding Filling

  • One box instant white chocolate pudding or banana pudding (follow directions on box)
  • add 2 cups of cold milk to pudding mix in a bowl and use whisk to mix completely until pudding mix has dissolved in milk.

Whipping cream

  • Add whipping cream to a mixing bowl, add powdered sugar and vanilla. Whip until cream is thick and holds together.
  • Fill pie shell with pudding, top with whipped cream, add strawberries and blueberries.
