The Ultimate Buttery Chicken Parmesan recipe- How to make it

Today, I want to share with you a delicious recipe that is perfect for any night of the week – The Ultimate Buttery Chicken parmesan.

I used to make all the time back in the 80’s and 90’s! This ultimate buttery baked parmesan chicken recipe is a classic that has stood the test of time. Boneless chicken breasts, butter, parmesan cheese, bread crumbs, eggs and seasonings. It is a total crowd pleaser because the chicken is moist and tender and the crisp bread crumb coating is golden brown.

This ultimate buttery baked chicken parmesan recipe does not have tomatoes in it. Although you could probably add a tomato sauce over it to make it a more traditional chicken parmesan recipe.

Ingredients for ultimate buttery chicken parmesan

Let’s make this perfectly clear this is not a low cal recipe haha! Hence the name buttery baked chicken parmesan. This is a recipe that is perfect for having friends over or for special occasions because it is rich. Rich because of the butter but also the flavor!

The original recipe calls for sliced mushrooms but I sometimes leave it out depending on who I am serving this to. Because I make this for just me and the hubs I half the recipe.

My mouth is watering thinking about it right now!

Ingredients

  • 6 Boneless chicken breasts halves
  • 2 eggs
  • 1/4 to 1/2 pound butter melted
  • 1/2 C grated Parmesan cheese
  • 1 C Italian bread crumbs
  • Squeeze of 1/2 lemon
  • Italian seasonings or 2 tsp garlic powder
  • 1 Tbsp fresh parsley finely chopped
  • salt and pepper to taste
  • 1/2 pound Sliced mushrooms (optional)

I am a big fan of Stella organic shredded Parmesan cheese. It has a really good flavor.

Instructions on how to make the parmesan chicken

When I made this dish I only used 3 half breasts because it was for just my hubby and I. Rinse off your chicken breasts and pat dry with a paper towel. Set aside.

Beat eggs with salt and pepper. Pour in to a flat dish

In a shallow dish add bread crumbs, parmesan cheese, Italian seasonings or garlic powder, parsley.

Do you dip the chicken in the egg first? Yes

Begin by dipping each chicken breast into the egg mixture, then roll in bread crumb mixture. Make sure egg mixture is covering it completely and immediately dredge the piece of chicken into the bread crumbs. Coat both sides well.

How do you make your chicken soft and not chewy? If your chicken breasts are really thick you can flatten them by pounding them between two sheets of waxed paper.

I have never had to do this. Never a problem with this recipe. The chicken comes out perfect every time.

You can double dip them in the egg and bread crumbs for a thicker coating.

Can you fry the ultimate buttery parmesan chicken breasts? I have seen other recipes doing this but I have only made this recipe by baking it.

I like to do what works best.

Place your chicken into a dish sprayed with a little non-stick spray. I love using white baking dishes like this one because it goes from oven to table. This type of baking pan is very versatile too. I use it for lasagna, brownies, cakes and other dishes for a crowd.

Adding the ulitmate buttery goodness

Melt butter in a small saucepan. Stir in parsley and 1/2 lemon juice.

Now drizzle half of that delicious butter over the top of your chicken. Oh I am telling you this is seriously a restaurant quality chicken dish.

You will want to keep this recipe handy so make sure you pin it to your cooking board on Pinterest.

Bake at 375 degrees for 25 to 30 minutes.

If adding mushrooms remove from oven and sprinkle sliced mushrooms and pour remaining butter sauce over everything. Return to oven and bake 5 to 10 minutes longer.

If you are not using the mushrooms just pour the rest of the butter over the top and return to oven for 5-10 min.

This dish is not only easy to make, but also incredibly tasty and satisfying.

Side dish roasted potatoes and asparagus

What pairs well with parmesan chicken? Roasted baby red potatoes, sliced onion and asparagus! I love to make these veggies because it is so simple to do.

This is a go to side dish for big crowds too! Just chop up lots of your favorite vegetables and drizzle with olive oil, seasonings like beer can chicken seasoning by Weber. I keep two on hand because I use it on EVERYTHING!

I slice baby red potatoes and place them on a cookie sheet. Add in some asparagus whole or cut in half.

Drizzle olive oil all over them so that they get golden brown. Sprinkle with salt and pepper.

Roast in a 450 degree oven for 25 minutes or until the potatoes are done. You can flip the potatoes and asparagus over half way through to get a golden color on both sides of your veggies.

Add a mixed green salad. Dinner is ready!
