- 6 Boneless chicken breasts halves
- 2 eggs
- 1/4 to 1/2 pound butter melted
- 1/2 C grated Parmesan cheese
- 1 C Italian bread crumbs
- Squeeze of 1/2 lemon
- Italian seasonings
- 1 Tbsp fresh parsley finely chopped
- salt and pepper to taste
- 1/2 pound Sliced mushrooms optional
2 shallow dishes
1 9 x 13 pan
Instructions
Rinse off your chicken breasts and pat dry with a paper towel. Set aside. Beat eggs with salt and pepper. Pour in to a flat dishIn a shallow dish add bread crumbs, parmesan cheese, Italian seasonings, parsley. Begin by dipping each chicken breast into the egg mixture, then roll in bread crumb mixture. Make sure egg mixture is covering it completely and immediately dredge the piece of chicken into the bread crumbs. Coat both sides well. Place your chicken into a dish sprayed with a little non-stick spray. Melt butter in a small saucepan. Stir in parsley and 1/2 lemon juice. Now drizzle half of that delicious butter over the top of your chicken. Oh I am telling you this is seriously a restaurant quality chicken dish. You will want to keep this recipe handy so make sure you pin it to your cooking board on Pinterest. Bake at 375 degrees for 25 to 30 minutes. If adding mushrooms remove from oven and sprinkle sliced mushrooms and pour remaining butter sauce over. Return to oven and bake 5 to 10 minutes longer.
