Fresh from the Garden: Creamy Roasted Tomato Soup Recipe

This is the easiest most delicious fresh from the garden creamy roasted tomato soup recipe! We had an abundance of tomatoes in my garden this year so what’s a girl to do? Make soup! Not just any tomato soup but a roasted tomato soup. When you roast any vegetables they get sweeter and more flavorful. Here is the recipe and the directions on how to make it.

Ingredients

4 pounds of fresh ripe tomatoes cut into large chunks (I have used all one kind and I have also mixed some up with mini tomatoes)

3 large cloves of garlic (mashed)

1 large onion cut into 8 large chunks

2 cups Chicken broth

1/2 cup cream

1 cup Acini di pepe pasta (optional)

Kosher salt

Olive Oil

2 Tbsp Fresh herbs (Oregano, Parsley, Basil and Thyme) You can use dried but use less as it is more potent

Roasting Tomatoes Onions and Garlic

The great thing about his soup recipe is that it can be ready in 40 minutes. Homemade amazing flavorful creamy soup.

Cut up tomatoes into large chunks and put onto cookie sheet. Cut up onions into large chunks. Smash garlic with a knife and add it to the cookie sheet.

‘Snip fresh herbs with scissors or a knife and sprinkle over the tomatoes, onions and garlic.

Drizzle the entire cookie sheet with about 2 Tbs of olive oil and kosher salt.

Creamy Roasted Tomato Soup

Roast in the oven at 400 degrees for 30 minutes.

Making Creamy Roasted Tomato Soup

Once the tomatoes, onions and garlic have been roasted add the entire cookie sheet including all the juices on pan into a soup pot. I have been loving using my Our Place Perfect Pot in blue. It cooks like dream and is easy to clean!

Add chicken broth and use hand blender to puree all ingredients until smooth

At this point I added in the tiny pasta and cooked until pasta was soft. About 10 minutes. If you decide not to add the pasta you can go onto the next step.

Add cream to the pot and mix completely.

Serving Creamy Roasted Tomato Soup

Ladle up this soup into bowls and enjoy! We served soup with open faced chicken, apple and gruyere cheese broiled sandwiches. So delicious and easy to make. Let me know if you try this soup recipe I would love to know what you think.

Here are more of my favorite soup recipes.

Karins Kottage

Welcome to Karins Kottage! There is always something fun going on! You would think after becoming an empty nester couple that our nest would be very quiet and empty but our Kottage nest is usually more full than what we started out with! You might find me hosting a birthday party or graduation party and a baby shower on the same weekend or a big outdoor get together with 25 of our friends and family in the backyard or maybe I might be in the kitchen trying out a new recipe for my hubby and I to grill on the BBQ for a quiet night for the two of us. I am passionate about entertaining and setting a beautiful table! I may or may not have an addiction to cloth napkins and fun salad plates oh and goblets too! I think I will always have a home decorating DIY project in the works as long as my hubby is on board with me haha. We have painted A LOT in the 6 homes we have owned in the 35 years that we have been married as well as re-done multiple pieces of furniture, added wall and ceiling treatments, replaced lights, bathroom fixtures and even tiled floors! I have sewn what seems like a million window treatments for our home as well as for family, made slipcovers, and duvets and even a formal dress or two!
