Roasted Pork Loin with Pears A Flavorful and Easy Weeknight Dinner

Most of this meal is roasted on one pan, which makes clean-up a breeze!

Roasted Pork Loin with Pears

Pork loin is one of those versatile proteins that can be roasted in the oven or grilled, and it always turns out juicy and flavorful. Pairing it with sweet pears, hearty yams, red potatoes, and onions creates a beautiful balance of savory and sweet. To round out the meal, I added a side of roasted asparagus—seasoned simply with olive oil, Mediterranean herbs, and Parmesan cheese. It’s the perfect weeknight dinner when you want something that’s both easy and special.

Ingredients For Roasted Pork Loin with Pears:

  • Nonstick cooking spray
  • 1 pound pork tenderloin, trimmed
  • Salt and freshly cracked black pepper
  • 1 teaspoon beer can chicken seasoning (optional, but adds great flavor!)
  • 2 Bartlett or Comice pears, cored and quartered
  • 1 pound yams, sliced into 1/2-inch rounds and halved
  • 1 red potato, sliced (if you have one in the pantry)
  • 1 small onion, cut into 1/2-inch wedges
  • 1/4 cup olive oil
  • 3 tablespoons balsamic vinegar
  • 1 lemon, zested and juiced
  • 1 tablespoon pure maple syrup
  • 2 teaspoons minced garlic
  • 2 teaspoons chopped fresh thyme (plus more for garnish)

Asparagus Ingredients:

  • 1 bunch of fresh asparagus, washed and dried
  • Olive oil
  • Salt
  • Mediterranean seasoning (optional)
  • Lemon juice
  • Grated Parmesan cheese

Directions For Roasted Pork Loin with Pears:

Preheat the oven to 400°F. Spray a rimmed baking sheet with nonstick cooking spray.

Season the Pork: Season the pork tenderloin with salt, pepper, and beer can chicken seasoning (if using). Place the pork in the prepared baking pan.

    Prepare the Veggies: Add the pears, yams, red potato, and onion to the pan around the pork.

    Roasted Pork Loin with Pears

    Make the Marinade: In a small bowl, whisk together the olive oil, balsamic vinegar, lemon zest, lemon juice, maple syrup, garlic, thyme, and 1/2 teaspoon each of salt and pepper.

    Toss to Coat: Pour the marinade over the pork and veggies. Toss everything to ensure the pears, potatoes, and onion are evenly coated with the flavorful mixture.

      Roasted Pork Loin with Pears

      Roast: Bake in the preheated oven for 30 to 35 minutes, or until the pork reaches an internal temperature of 145°F. Let the pork rest for 5 minutes before slicing. Garnish with additional fresh thyme.

        Roasting Asparagus

        Roast the Asparagus: While the pork is resting, increase the oven temperature to 425°F. Arrange the asparagus on a separate baking sheet. Drizzle with olive oil and sprinkle with salt, Mediterranean seasoning, and a squeeze of lemon juice. Finish by sprinkling Parmesan cheese over the top. Roast for 12-15 minutes, until the cheese melts and turns golden brown.

          Serve: Slice the pork tenderloin and serve it with the roasted pears, yams, and potatoes, alongside the roasted asparagus. Add a simple side salad to complete your weeknight dinner.
