Frozen Blueberry Dessert or Popsicle Recipe

This dessert just screams summer to me! It is icy cold, creamy, fruity and delicious! Plus it is healthy in my book with all the delicious blueberries. This Frozen blueberry dessert or popsicle recipe (depending on how you serve it) will be become a summertime favorite for your family!

They are just about the easiest thing to make on the planet! The only hard part is waiting for them to freeze. You could actually eat them right away but they are worth the wait!

Directions on making the Frozen Blueberry Dessert

The first thing you do is mix together all the wet ingredients. Mix the yogurt, cream or milk (you could even use half and half), juice and honey together in a bowl.

Next you need to fold in the delicious big fat frozen blueberries! Fold them don’t mix them or they will fall apart and look mushy. Unless you like them that way. I love blueberry anything! Have you tried my lemon blueberry cottage cheese pancakes yet? or my peach blueberry crisp? or how about my Blueberry mint lemonade? Oh they are all so delicious!

Dessert cups or popsicles

Here is where you decide how you want to serve this amazing Frozen blueberry dessert. You can either scoop the blueberry mixture into little dessert dishes or into popsicle molds. If you don’t have popsicle molds you could use little paper cups and a wooden popsicle stick.

I decided to make both! I made a few popsicles in cups and also a few in molds. Then I wanted to serve it for adults so I used my mini martini glasses and using an ice cream scoop and filled up the little glasses. Just look at the beautiful color of these Frozen blueberry desserts.

After we filled these little cups and added the colorful sticks into them, they would not stay upright. So had to come up with an idea.

We placed a small amount of tin foil over the tops of each cup and then inserted the plastic popsicle stick. It worked perfectly to hold the stick in place. Into the freezer they go! After 2-4 hours they are ready to eat!

They look so fancy in mini martini glasses. I should have saved a few berries to sprinkle on top with a pice of mint to make them look really special.

The kids LOVED them and gobbled them right down!

Frozen Blueberry Dessert or Popsicles

Easy and healthy frozen dessert for adults and kids

Ingredients

  • 1/2 C Milk or heavy whipping cream
  • 1 C Vanilla Greek Yogurt
  • 1 TBSP Honey
  • 1 C Frozen Blueberries
  • 2 Ounces juice We used an antioxidant drink like Bai Blueberry

Instructions

  • Combine all we ingredients into a bowl
    Whisk until smooth
    Fold in blueberries
    Using an ice cream scoop, fill small dessert dishes or popsicles molds.
    When making popsicles make sure to use a mold with sticks or use mini paper cups and place a wooden stick in the cup to be able to pull out the popsicles once frozen.
    Freeze until frozen 2-4 hours.
