Yummy no bake cheesecake bites!

We made these delicious no bake cheesecake bites for dessert last night and family and friends were raving about them and could not eat just one two or three!! I found the recipe Oh Sweet Basil blog we just made a slight change.
I love this tip she shared….line the mini cupcake Pam’s with Saran Wrap so that the little tarts pop right out. We also used a medium ice cream scoop to fill the shells with the filling. The recipe calls for Creme fraiche but we used vanilla Greek yogurt and it worked perfectly.
The raspberry sauce made from frozen raspberries is to die for!!
Ingredients
for the crust:
3 tablespoons sugar
2 cups graham cracker crumbs
1/2 cup (1 stick) unsalted butter, melted
for the filling:
1 cup heavy cream
10 ounces cream cheese, room temperature
6 ounces crème fraîche (we used vanilla Greek yogurt)
2/3 cup sifted confectioners’ sugar
For the raspberry sauce:
2 1/2 teaspoons cornstarch
3 tablespoons sugar
1/3 cup water
12 ounces frozen raspberries, thawed
fresh raspberries, for garnish

You would think after becoming an empty nester couple that our nest would be very quiet and empty but our Kottage nest is usually more full than what we started out with! I think I will always have a home decorating DIY project in the works as long as my hubby is on board with me haha. We have painted A LOT in the 6 homes we have owned in the 35 years that we have been married as well as re-done multiple pieces of furniture, added wall and ceiling treatments, replaced lights, bathroom fixtures and even tiled floors! I have sewn what seems like a million window treatments for our home as well as for family, made slipcovers, and duvets and even a formal dress or two!
