You know how much I adore transforming pork leftovers into something magical, and today’s post is all about pork tacos! I am using leftover pork, rice quinoa, peppers and onions to make scrumptious tacos. Recently, we grilled a scrumptious pork loin (check out our grilling method here), and we had some leftovers. So, I whipped up a batch of leftover pork tacos that the family absolutely devoured. Let me walk you through this easy and delicious recipe.

- Leftover pork loin
- Leftover Seeds of Change brown rice and quinoa
- 1/2 onion, sliced
- 1 red pepper, sliced
- A small amount of leftover zucchini, sliced
- 1 lime
- 1 avocado, chopped
- Fresh cilantro, chopped
- Fajita seasoning (about 1 tsp or to taste)
- Mango salsa
- Shredded Mexican cheese
- Brianna’s Cilantro Lime dressing
- Flour tortillas
- Olive oil
Instructions:
Warm Up the Tortillas:
- Heat up a skillet with a little bit of olive oil.
- Heat the tortillas until they start to bubble, then flip and repeat. Set the warm tortillas aside.
Prepare the Filling:
- In the same frying pan, add a little more olive oil.
- Sauté the sliced onions and red peppers until the onions are almost translucent.
- Add the leftover rice/quinoa and the leftover pork.
- Sprinkle the fajita seasoning over the mixture and some salsa and stir well.
Assemble the Tacos:
- Take one flour tortilla and fill it with the hot pork rice mixture.
- Top with chopped avocado, a squeeze of lime juice (if desired), mango salsa, a drizzle of cilantro lime dressing and chopped fresh cilantro.
- For a pretty presentation, serve on a plate with extra chopped cilantro and lime slices.
And there you have it! A delicious, quick, and satisfying meal made from leftovers. These tacos are perfect for a weeknight dinner or a casual get-together with friends.
Setting the Scene of how to serve Leftover Pork Tacos
For a fun and festive tablescape, I used orange napkins placed on woven placemats, under my favorite oval-shaped white dinner plates (a lovely gift from my mom – they’re super heavy and add a touch of elegance). To add a pop of color, I chose pink and orange napkins with bright beaded napkin rings.
