Leftover Pork Tacos
- Leftover pork loin Whatever you have left
- Leftover Seeds of Change brown rice and quinoa 1/2 a package
- 1/2 onion sliced
- 1 red pepper sliced
- 1/2 leftover zucchini sliced
- 1 lime
- 1 avocado chopped
- 1 bunch Fresh cilantro chopped
- 1 tsp Fajita seasoning about 1 tsp or to taste
- 1/4 cup Mango salsa
- 1/2 cup Shredded Mexican cheese or more if desired
- Brianna's Cilantro Lime dressing as desired
- 6 Flour tortillas
- 1-2 tbsp Olive oil

Warm Up the Tortillas: Heat up a skillet with a little bit of olive oil. Heat the tortillas until they start to bubble, then flip and repeat. Set the warm tortillas aside.Prepare the Filling:In the same frying pan, add a little more olive oil.Sauté the sliced onions and red peppers until the onions are almost translucent. Add the leftover rice/quinoa and the leftover pork.Sprinkle the fajita seasoning over the mixture and stir well. Add in some mango salsa or your favorite salsa. Assemble the Tacos:Take one flour tortilla and fill it with the hot pork rice mixture.Top with chopped avocado, a squeeze of lime juice (if desired), more mango salsa, and chopped fresh cilantro.For a pretty presentation, serve on a plate with extra chopped cilantro and lime slices.
