Leftover Pork Tacos
  • Leftover pork loin Whatever you have left
  • Leftover Seeds of Change brown rice and quinoa 1/2 a package
  • 1/2 onion sliced
  • 1 red pepper sliced
  • 1/2 leftover zucchini sliced
  • 1 lime
  • 1 avocado chopped
  • 1 bunch Fresh cilantro chopped
  • 1 tsp Fajita seasoning about 1 tsp or to taste
  • 1/4 cup Mango salsa
  • 1/2 cup Shredded Mexican cheese or more if desired
  • Brianna's Cilantro Lime dressing as desired
  • 6 Flour tortillas
  • 1-2 tbsp Olive oil

Instructions on how to make leftover pork tacos
  1. Warm Up the Tortillas: Heat up a skillet with a little bit of olive oil. Heat the tortillas until they start to bubble, then flip and repeat. Set the warm tortillas aside.
    Prepare the Filling:In the same frying pan, add a little more olive oil.
    Sauté the sliced onions and red peppers until the onions are almost translucent. Add the leftover rice/quinoa and the leftover pork.
    Sprinkle the fajita seasoning over the mixture and stir well. Add in some mango salsa or your favorite salsa.
  2. Assemble the Tacos:Take one flour tortilla and fill it with the hot pork rice mixture.
    Top with chopped avocado, a squeeze of lime juice (if desired), more mango salsa, and chopped fresh cilantro.
    For a pretty presentation, serve on a plate with extra chopped cilantro and lime slices.
