Ingredients
For the Crust
- 1 1/4 cups flour
- 1 stick butter (1/2 cup), cold and cubed
- Pinch of salt
- 2–3 Tbsp ice water
For the Filling
- 4 large eggs
- 1 cup cream or half-and-half
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 4 slices bacon, cooked until almost crispy
- 1/4 cup chopped green pepper
- 1 green onion, sliced
- 1 tablespoon fresh basil, chopped
- 1/2 cup shredded or crumbled cheese (Swiss, cheddar, Gruyère, goat cheese… all delicious)

How to Make Mini Quiche Appetizers
Make the Crust
- Combine the flour and a pinch of salt.
- Cut in the cold butter until crumbly.
- Add ice water a tablespoon at a time until the dough comes together.
- Wrap and chill for 20 minutes.

Prepare the Bacon + Veggies
This step adds BIG flavor!
- In a small skillet, cook the bacon until almost crispy.
- Add the chopped green pepper and sliced green onion to the skillet.
- Sauté together for 2–3 minutes until softened and fragrant.
- Set aside to cool slightly.

Shape the Crusts
- Preheat your oven to 375°F.
- Roll out the chilled dough and cut into small circles.
- Press into a mini muffin tin to form the cutest little shells.


Mix the Filling
- Whisk together eggs, cream/half-and-half, salt, and pepper.
- Stir in the cooled bacon mixture and cheese.
