Best Snowball Cookie Recipe

This is the best snowball cookie recipe ever! I have been making these cookies for over 40 years now! The first time I made them was for my mom. Mom had been invited to a cookie exchange party but didn’t have time to bake the cookies. I got to stay home from high school and bake! I was thrilled! We won the best cookie prize!

Snowball Cookie Recipe

Name of Cookie

Did you know these cookies are known by many names? Sandie cookies, Russian Tea cakes, Mexican wedding cookies and of course snow ball cookies!

How to make Best Snowball Cookie

First you cream the butter and powdered sugar together.

Next you add in the vanilla, flour and chopped pecans. Mix until you get a nice stiff dough.

Once the dough is made you can use a cookie scoop to scoop little balls of dough. If you don’t have a cookie scoop just use a spoon and form them into little round balls.

Place them on a cookie sheet lined with parchment paper. They are ready to be baked for about 20-25 min in a 325 degree oven.

One they are baked and still warm, roll in powdered sugar until completely covered. Oh these little nuggets are so yummy!

Here is the recipe that I typed up a long time ago to give out to friends at a cookie exchange party. You can tell it has been used a bit! haha

These are super easy to make and taste soooo good. I love a butter cookie with lots of chopped pecans and then to top it all off they are rolled in powder sugar while still warm! I cannot stop eating them when I make them!

Tip- Use good quality salted butter and the best vanilla you can get your hands on.

Sandie cookie (Snowball Cookie, Russian Tea Cake, Mexican Wedding cookie)

Equipment

  • Cookie Sheet
  • Parchment paper
  • Mixer
  • 1 " Cookie scoop

Ingredients
  

  • 1 Cup Butter softened
  • 1/2 Cup Powdered Sugar Plus 1/2 C extra for rolling the cookies in
  • 2 tsp vanilla
  • 1 Cup Chopped pecans
  • 2 Cups Sifted Flour I did not sift my flour but you can.

Instructions
 

  • Cream butter and Powdered sugar, Add vanilla and mix.
    Add flour and nuts and combine. Mixture will be thick
    Using a cookie dough scoop or a teaspoon, scoop 1"-1 1/2" balls and place on cookie sheet that has been covered with parchment paper.
    Bake in preheated oven at 325 degrees for 20-25 min.
    Once baked roll each cookie in powdered sugar to coat.

    Have you ever thought about browning the butter? I ate some once and it tasted as though the butter was browned. What about toasting the pecans slightly?

    They look delicious. I don’t bake anymore, so at Christmas I buy Pepperich Farms Snowball cookie with citrus.
