Easy Tomato Bruschetta Recipe you will want to share with friends and family!
This recipe for Tomato bruschetta is such an easy appetizer that I love to make as soon as the warm weather arrives but really it is good anytime.
I just use what I have on hand… a couple of tomatoes (but Roma tomatoes are the best) a little minced garlic, yellow, red or green peppers, fresh basil leaves and mozzarella cheese.
Chopping all the fresh ingredients in tiny little pieces is key to making sure that all that goodness will fit on top of the baguettes slices.
Once everything is all chopped, add 1 tbsp of olive oil and 1 Tbsp of Balsamic vinegar (or use either to your liking) and some black pepper.
Here’s how I get golden baguette slices- I use a French baguette cut into 1” or so slices. Next pour a tablespoon or so of olive oil in a frying pan. (I prefer a plain ole black frying pan because everything seems to cook up better in it)
Sprinkle a little kosher salt onto each slice of bread. Toast on both sides until golden.
Once the slices are toasted add slices of mozzarella cheese, Add a tablespoon of the chopped veggies and for this particular tomato Bruschetta recipe top it with fresh ribbons of basil.
