Turkey Taco stuffed yams

These Turkey Taco Stuffed Yams are so yummy!
My hubby wants to have them once a week!

I love that it is super simple, filling and healthy meal!
This is such a great meal to make on a weeknight because it is so easy…just pop a yam or two into the oven for 45 min to an hour.
Then brown the turkey meat and onions, add canned beans and corn.
Top with avocado, sour cream, corn chips and a sprinkle of shredded cheese.
                  Kids will love this as much as adults.
This is a super fun meal for Halloween night especially with cool spooky corn chips from Target. What kind of quick meals do you like to cook for your family on the week nights?

Turkey Taco Yams

Quick and easy dinner for a week night and your kids will love it!

Ingredients

  • 1 Yam
  • 1 lb Ground turkey
  • 1 can Corn
  • 1/2 sliced Onion
  • 1 can Black Beans or your favorite beans
  • 1 pkg Taco Seasoning
  • Salsa
  • Sour Cream
  • Shredded Cheddar Cheese
  • Corn Chips

Instructions

  •  Bake yam at 400 degrees for 45 min or until soft.
    2. Brown the ground turkey and the 1/2 sliced onion until cooked. 
    3. Add 1 can corn drained, 1 can black beans drained and rinsed, 1 packet of taco seasoning. Stir until combined and heated through. 
    4. Cut yam in half and top with meat, corn and beans.
    5. Top with sliced avocado, sour cream, salsa, corn chips and a sprinkle of shredded cheese.

I think I will always have a home decorating DIY project in the works as long as my hubby is on board with me haha. We have painted A LOT in the 6 homes we have owned in the 35 years that we have been married as well as re-done multiple pieces of furniture, added wall and ceiling treatments, replaced lights, bathroom fixtures and even tiled floors! I have sewn what seems like a million window treatments for our home as well as for family, made slipcovers, and duvets and even a formal dress or two!
