Spaghetti Squash with Turkey Vegetable Sauce

I decided to try another squash recipe… This time I used spaghetti squash and was pleasantly surprised! My husband asked… What kind of pasta is this…. I said Its not pasta it’s spaghetti squash… He loved it..he loves just about everything. 

 

 
This is very easy to make… Preheat oven to 375 cut squash in half lengthwise place each piece cut side down on cookie sheet and bake for 30-45 minutes or until you can stick a knife into skin easily. 
 
Meanwhile season your 1/2 lb ground turkey with salt and pepper,  brown your ground turkey in a little olive oil until cooked. Remove from pan, set aside.
 
To the hot pan add in your selection of chopped veggies I ised 1/2 onion, one large garlic clove, 1 zucchini, left over peppers.  Sauté until onions until clear, add in canned tomatoes and 2 Tbsp of brown sugar.
Add in some bottled spaghetti sauce….add until desired thickness. 
Tip- I use Costco’s marinara sauce. 
 
Once spaghetti squash is done, flip over and remove seeds, use a fork to scrape down the pulp… It will be strings like spaghetti. Place squash on plate top with meat sauce .. Yumalicious!

You would think after becoming an empty nester couple that our nest would be very quiet and empty but our Kottage nest is usually more full than what we started out with! You might find me hosting a birthday party or graduation party and a baby shower on the same weekend or a big outdoor get together with 25 of our friends and family in the backyard or maybe I might be in the kitchen trying out a new recipe for my hubby and I to grill on the BBQ for a quiet night for the two of us. I am passionate about entertaining and setting a beautiful table! I may or may not have an addiction to cloth napkins and fun salad plates oh and goblets too! I think I will always have a home decorating DIY project in the works as long as my hubby is on board with me haha. We have painted A LOT in the 6 homes we have owned in the 35 years that we have been married as well as re-done multiple pieces of furniture, added wall and ceiling treatments, replaced lights, bathroom fixtures and even tiled floors! I have sewn what seems like a million window treatments for our home as well as for family, made slipcovers, and duvets and even a formal dress or two!
