Quick no cook meal on a hot day!

These 3 recipes are perfect for hot days when you don’t want to cook! It’s going to ne 100 degrees again today 🙁
These little darlings are so quick and easy! They start with frozen phyllo tartlets..you can find the frozen section at your grocery store. Filled with whipped cream and topped with fresh berries. They are bite sized little nuggets of goodness that melt in your mouth.

To dip the bottoms of them in chocolate I melted Ghirardelli semi sweet chocolate chips in the microwave until the chocolate was all shiny and gorgeous looking 😉 then I simply dipped the bottom of each shell until the chocolate reached half way up on the shell.

I placed each shell upside down back onto the container they come in and once they were all dipped, placed them in the fridge to harden. It only took 5 minutes. Then I whipped the cream mixed with 1tsp. vanilla and 1/4 cup of sugar. Filled the tartlets with whipped cream and nice sized berries and a couple of blueberries. Perfect for the 4th!

Next I tried a new recipe Asparagus Ribbon Salad from Brooklyn Supper Blog

Asparagus Ribbon Salad with Dried Cherries (inspired by Smitten Kitchen)

serves four as a side

1/3 cup dried cherries (tart Montgomeries are the best)

1 small shallot, minced

3 tablespoons olive oil

2 tablespoons fresh-squeezed lemon juice

1 teaspoon rice wine vinegar

1/2 teaspoon sea salt

1 pound asparagus, washed

In a small bowl, whisk the lemon juice and vinegar into the olive oil. Add the sea salt, shallot, and dried cherries, and set aside. The cherries will plump up while they steep in the vinaigrette.

To shave the asparagus, hold each stalk by the woody stem and use a peeler to shave upwards.

Place shavings in a bowl, drizzle with the vinaigrette, and toss. Check the salt and acid levels and adjust as needed. If you have the time, cover and refrigerate for an hour or so. Serve cold.

Here I made tortilla roll up sandwiches. I started with whole grain tortillas. I warmed them up a tad by placing them on my gas burner for a few seconds to bring out the flavors.
Then I added a little mayo, some raspberry pepper jelly, sliced avocados, sliced red bell peppers, shaved slivers of cucumbers and sliced turkey breast. Rolled them up and sliced them into bite sized pieces! YUMMMMMM!!

You would think after becoming an empty nester couple that our nest would be very quiet and empty but our Kottage nest is usually more full than what we started out with! You might find me hosting a birthday party or graduation party and a baby shower on the same weekend or a big outdoor get together with 25 of our friends and family in the backyard or maybe I might be in the kitchen trying out a new recipe for my hubby and I to grill on the BBQ for a quiet night for the two of us. I am passionate about entertaining and setting a beautiful table! I may or may not have an addiction to cloth napkins and fun salad plates oh and goblets too! I think I will always have a home decorating DIY project in the works as long as my hubby is on board with me haha. We have painted A LOT in the 6 homes we have owned in the 35 years that we have been married as well as re-done multiple pieces of furniture, added wall and ceiling treatments, replaced lights, bathroom fixtures and even tiled floors! I have sewn what seems like a million window treatments for our home as well as for family, made slipcovers, and duvets and even a formal dress or two!
