Yam Fries!

Looking for something other than french fries, baked potato or mashed potatoes to go along with your dinner tonight? These are to die for!! Yam fries…sweet and delectable! I am telling you there was not one left on the plate last night at our Father’s Day dinner! I chose to make mine the shape of regular french fries instead of wedges and they turned out fabulous. The only thing I would like try is……. to make them a little bit crispy next time. Also I forgot to add the paprika and they were still unbelievable. Try them out and let me know what you think! Scrumpshalumpshish!!!!!!! (mine and Tiff’s favorite word)

Things You’ll Need:
4 Yam potatoes (about 2 lbs.
2 tbsp vegetable oil
2 tsp fresh orange juice
1 tsp salt
1/2 tsp black pepper
1 tbsp packed brown sugar
1/2 tsp ground cinnamon
1/2 tsp chili powder
1/4 tsp paprika
Parsley (optional)
Step1 Preheat oven to 425 degrees. While it is heating up, in a large bowl, mix the vegetable oil with the orange juice, salt and pepper.
Step2 Peel and cut the sweet potatoes into strips, like French fries and put the sweet potatoes into the vegetable oil mixture until well coated.
Step3 Next, place potatoes in a single layer on a large baking sheet. Bake until tender, about 15-20 minutes, while turning the fries over after about 10 minutes.
Step4 Combine brown sugar with cinnamon, if using, chili powder and paprika. Sprinkle evenly over sweet potatoes. Bake until glazed, about 5-10 minutes. Sprinkle optional parsley on top.

Welcome to Karins Kottage! There is always something fun going on! You would think after becoming an empty nester couple that our nest would be very quiet and empty but our Kottage nest is usually more full than what we started out with! You might find me hosting a birthday party or graduation party and a baby shower on the same weekend or a big outdoor get together with 25 of our friends and family in the backyard or maybe I might be in the kitchen trying out a new recipe for my hubby and I to grill on the BBQ for a quiet night for the two of us. I am passionate about entertaining and setting a beautiful table! I may or may not have an addiction to cloth napkins and fun salad plates oh and goblets too! I think I will always have a home decorating DIY project in the works as long as my hubby is on board with me haha. We have painted A LOT in the 6 homes we have owned in the 35 years that we have been married as well as re-done multiple pieces of furniture, added wall and ceiling treatments, replaced lights, bathroom fixtures and even tiled floors! I have sewn what seems like a million window treatments for our home as well as for family, made slipcovers, and duvets and even a formal dress or two!
