Reeses Peanut Butter Brownie Oreo Ice Cream Cake!

My daughter…Madeline, is guest blogging today-
My amazing husband just celebrated his 28th birthday and I wanted to create a delicious birthday cake for him featuring all his favorite guilty pleasures, namely: reeses peanut
butter cups, oreo’s, chocolate chip cookie dough, brownies, and of course ice cream.
I have had this pin (HERE) looming around on my
desserts board, just tempting me for a while and so I decided to go for it!
Plus I recently discovered a way to make cookie dough frozen yogurt (HERE) that doesn’t require an ice cream maker so I figured I would do a mash-up of the two recipes with a few
tweaks of my own to present the love of my life with the birthday cake of his
dreams!
Ice
cream cakes are so easy to make, I don’t know why retailers think they can
charge a million bucks for them. It’s slightly ridiculous!
Basically
the formula is simple:
Step 1, create a base. Your base can be anything from a cookie crust, brownie crust,
oreo crust, or graham cracker crust, just be sure to bake it in the same pan
you are going to use for your ice cream cake –
I
used a 10 in spring form pan. I am sure there are other wonderful things you
could use for your base but I haven’t thought of them yet… maybe I will
experiment and get back to you.
Step 2, Ice cream layer. Set your carton of ice cream on the counter for a while until it has softened – not melted. Then assemble your minions — I mean mix
ins….Candy, cookies, more brownies (always my choice), fruit, bacon (if you are one of those people….) pretty much whatever you want. Fold the mix-ins into the softened ice cream and pour over your base and pop into the freezer to
set for at least 2-3 hours (depending on how soft you let your ice cream get).
You could be done here other than garnishing the top with hot fudge or more chopped up goodness that you put inside the ice cream…. but if you are making
an ice cream cake for someone special, why not go the extra mile!
So for the next layer I made the homemade chocolate chip cookie dough frozen yogurt which seriously took 5 seconds (after making it I didn’t want to freeze it – I wanted to eat the whole thing for myself).
Once your first layer has set up enough to be somewhat solid, just slather the next
layer on top. A few other layering ideas could be fresh fruit, another brownie
layer, pound cake slices, whole oreo’s. Again, the sky is the limit. If you do
put another solid layer (instead of ice cream or frozen yogurt) you will
probably want to do one more ice cream layer to top it off with.
Finally
once it is time to eat just pile on your garnishes to make it look all finished
and pretty. For my husband’s cake I just used chopped up reese’s peanut butter
cups and oreo’s (the mixture I folded into the ice cream). The cake I got the
inspiration from first drizzled the cake in hot fudge and then put her chopped
up candies – delish! Either way, make it look nice and then present it to your
object of affection and watch him fawn over it and you, because lets face it –
you are a miracle worker!
This recipe looks long but never fear – its not a lot of work and it is totally
worth it!
Reese’s Peanut Butter
Brownie Oreo Ice Cream Cake
Ingredients
BROWNIE –
1/2 cup unsalted butter
4 oz (or 1/4 cup) unsweetened chocolate – I used dark chocolate
chips
1 1/4 cup sugar
1 tsp vanilla
1/4 tsp salt
2 eggs
1/2 cup flour
ICE CREAM LAYER
 1 gallon vanilla ice cream,
softened
2 cups chopped Reese’s
peanut butter cups (I used minis)
1 sleeve chopped Oreo
cookies (probably about 2 cups)
COOKIE DOUGH FROZEN YOGURT
LAYER
1 cup flour
1/4 tsp salt
1/2 cup unsalted butter,
softened
1/2 cup packed brown sugar
1/4 cup sugar
2 tsp vanilla extract – I
always add a little extra
3/4 cups chocolate chips
1 cup vanilla yogurt
Directions
 1 day or about an hour
ahead:
  Make your brownie by
greasing a 10-in spring form pan and set your oven to 400 degrees.
 Melt your butter and
chocolate (I do this in the microwave…gasp!)
Stir in sugar, vanilla, and
salt. Add each egg one at a time until it is incorporated.
Mix in flour and beat until
glossy – about 1 minute.
Pour mixture into prepared
pan and bake for 15-20 minutes or until the brownie starts to pull away from
the sides of the pan.
Allow to cool completely
and if you are crazy like me give it an ice bath (doesn’t work with a spring
form pan…)
4 hours before: assemble
the ice cream layer by softening the ice cream and then using a rubber spatula,
fold your Reese’s and Oreo chunks (reserve a little of the mix-in’s for
garnishing the top of the cake).
Smooth the ice cream over
the brownie layer and pop into the freezer.
2 hours before: create your
chocolate chip cookie dough frozen yogurt by beating your butter and sugars
together until smooth. Add the vanilla and mix until combined.
In a separate bowl combine
flour, salt, and chocolate chips then slowly add to the butter mixture until
completely incorporated. Add yogurt and stir again.
Once the first ice cream
layer has set up a little, add this layer on top and then freeze until ready to
eat.
Before serving, take out
and allow to thaw for about 5 minutes (depending on how long it has been in the
freezer). Add some of the chopped Reese’s and Oreo’s to the top. Slice and
delve into a little piece of heaven.

    My husband and I were lucky enough to taste this treat……delicious! He usually doesn't get super excited about recipes but insisted that I get this one. Amazing presentation and taste!
