Ingredients
  

  • For the Farro
  • 1 1/2 Cups s spelt farro
  • 2 Tbsp olive oil
  • 4 Cups chicken broth
  • 2 cloves garlic finely chopped
  • For the Vegetables
  • 2 tbsp olive oil
  • 1 zucchini chopped
  • 3 yellow squash chopped
  • 1 onion chopped
  • 10 stalks of asparagus cut into bite-sized pieces
  • 1 small bunch basil finely chopped
  • Kosher salt to taste
  • 1 tsp beer can chicken seasoning

Method
 

  1. 1️⃣ Cook the Farro
  2. - Heat 2 tbsp olive oil in a large pot over medium heat.
  3. - Add garlic brown slightly, then stir in the spelt to toast for 1-2 minutes.
  4. - Pour in chicken broth and simmer until absorbed and farro is tender (~30 min).
  5. 2️⃣ Sauté the Vegetables
  6. - Heat 2 tbsp olive oil in a frying pan over medium-high heat.
  7. - Add zucchini, yellow squash, asparagus, and onion
  8. - Sprinkle with salt and seasoning Sauté until caramelized but still crisp (~8-10 min).
  9. 3️⃣ Combine & Serve
  10. - Stir the sautéed vegetables into the cooked farro
  11. - Mix in chopped basil and serve warm.
