- For the Farro
- 1 1/2 Cups s spelt farro
- 2 Tbsp olive oil
- 4 Cups chicken broth
- 2 cloves garlic finely chopped
- For the Vegetables
- 2 tbsp olive oil
- 1 zucchini chopped
- 3 yellow squash chopped
- 1 onion chopped
- 10 stalks of asparagus cut into bite-sized pieces
- 1 small bunch basil finely chopped
- Kosher salt to taste
- 1 tsp beer can chicken seasoning
1️⃣ Cook the Farro
- Heat 2 tbsp olive oil in a large pot over medium heat.
- Add garlic brown slightly, then stir in the spelt to toast for 1-2 minutes.
- Pour in chicken broth and simmer until absorbed and farro is tender (~30 min).
2️⃣ Sauté the Vegetables
- Heat 2 tbsp olive oil in a frying pan over medium-high heat.
- Add zucchini, yellow squash, asparagus, and onion
- Sprinkle with salt and seasoning Sauté until caramelized but still crisp (~8-10 min).
3️⃣ Combine & Serve
- Stir the sautéed vegetables into the cooked farro
- Mix in chopped basil and serve warm.
