Savory Farro with Sautéed Vegetables

Servings: 4 | Prep Time: 10 min | Cook Time: 35 min | Total Time: 45 min

Ingredients

For the Farro (Spelt)

  • 1 ½ cups spelt (farro)
  • 2 tbsp olive oil
  • 4 cups chicken broth
  • 2 cloves garlic, finely chopped

For the Vegetables

  • 2 tbsp olive oil
  • 1 zucchini, chopped
  • 3 yellow squash, chopped
  • 1 onion, chopped
  • 10 stalks of asparagus, cut into bite-sized pieces
  • 1 small bunch basil, finely chopped
  • Kosher salt, to taste
  • 1 tsp beer can chicken seasoning (or your favorite seasoning)

Instructions

Cook the Farro

In a large pot, heat 2 tbsp of olive oil over medium heat.

Add garlic and let it brown slightly, releasing its aroma.

Stir in the spelt and toast it for a couple of minutes to enhance its nutty flavor.

    Pour in the chicken broth, bring to a simmer, and cook until the liquid is absorbed and the farro is chewy yet moist (about 25-30 minutes). If a little broth remains, that’s fine—it adds moisture to the final dish.

      Sauté the Vegetables

      In a large frying pan, heat 2 tbsp of olive oil over medium-high heat.

      Add zucchini, yellow squash, asparagus, and onion to the pan.

        Sprinkle with salt and beer can seasoning, then sauté until the vegetables are golden brown and caramelized but still slightly crisp (about 8-10 minutes).

          Step 3: Combine & Serve

          Add the sautéed vegetables to the cooked farro and stir gently to combine.

          Mix in the chopped basil, giving it a final stir for that fresh, herby finish.

          Serve warm in bowls and enjoy!

          Ingredients
            

          • For the Farro
          • 1 1/2 Cups s spelt farro
          • 2 Tbsp olive oil
          • 4 Cups chicken broth
          • 2 cloves garlic finely chopped
          • For the Vegetables
          • 2 tbsp olive oil
          • 1 zucchini chopped
          • 3 yellow squash chopped
          • 1 onion chopped
          • 10 stalks of asparagus cut into bite-sized pieces
          • 1 small bunch basil finely chopped
          • Kosher salt to taste
          • 1 tsp beer can chicken seasoning

          Instructions
           

          • 1️⃣ Cook the Farro
          • – Heat 2 tbsp olive oil in a large pot over medium heat.
          • – Add garlic brown slightly, then stir in the spelt to toast for 1-2 minutes.
          • – Pour in chicken broth and simmer until absorbed and farro is tender (~30 min).
          • 2️⃣ Sauté the Vegetables
          • – Heat 2 tbsp olive oil in a frying pan over medium-high heat.
          • – Add zucchini, yellow squash, asparagus, and onion
          • – Sprinkle with salt and seasoning Sauté until caramelized but still crisp (~8-10 min).
          • 3️⃣ Combine & Serve
          • – Stir the sautéed vegetables into the cooked farro
          • – Mix in chopped basil and serve warm.
          • 💡 Tip: Serve with grilled chicken, shrimp, or top with feta for extra flavor!

The weather was so nice! We walked, biked and took a little boat ride.
          Happy heavenly Mother’s Day to my mom! How we al Happy heavenly Mother’s Day to my mom! How we all loved her! I miss her funny sense of humor, her fierce love of others, her cooking and desires to always please everyone. Mom had strength beyond my comprehension she was always gardening… moving heavy pots, digging in hard soil and creating an oasis everywhere she lived. Her love of all things French was something to admired. Everyone who ever walked into her home could immediately feel loved and cared for. Mom worked tirelessly in her chocolate company right up until just a few months before she died. Her sacrifices for us were uncountable. I love my mom and all she was and did and especially her faith in the Lord Jesus Christ. Here’s to all the moms past present and future and to all the sacrifices, teachings and loving us even when we drive them crazy.

          Travel for 15 days with only carryon luggage. My t Travel for 15 days with only carryon luggage. My two tone backpack is from Italy a few years ago but I found one similar in my LTK shop for you. 

My travel outfit tip- wear your denim jacket and raincoat to leave room in luggage. Loving this lightweight raincoat that is lined. It also fits great in my backpack.
