Cowboy Caviar
Quick and easy dip or side dish made with canned beans, tomatoes and corn from your pantry

- 1 Can Black beans Drained
- 1 Can Corn Drained
- 1 Can Tomatoes Diced
- 1-2 Green Onions Finely Chopped
- 1 Avocado (optional) Cubed
- 1/2 Lime Squeezed
- 1/4 Cup Cilantro Chopped
- Salt and Pepper To taste
- 1/4 Cup Red Wine Vinegar
- 1/4 Cup Olive Oil
Mix ingredients all together. Lightly fold in Avocado. Refrigerate until ready to serve. Can be made a day in advance. Store leftovers in fridge 3-4 days. If you don't have ingredients for dressing use bottled italian dressing.
