Easy Oven Roasted Pork Loin with Apples, Potatoes, and Carrots

Ingredients

  • 1–2 lb pork tenderloin
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper

  • 1½ cups baby carrots
  • 3 red potatoes, cut into chunks
  • 1 apple, sliced

Instructions

  2. In a small bowl, mix olive oil, salt, pepper, and seasonings.
  3. Rub mixture all over the pork tenderloin.
  4. Place pork in the center of a cookie sheet or roasting pan.
  5. Arrange carrots, potatoes, and apple slices around the pork.
  6. Drizzle a little extra olive oil and balsamic glaze over the vegetables and sprinkle with salt and pepper.
  7. Roast for 30-40 minutes, or until pork reaches an internal temperature of 145°F.
  8. Optional but recommended: Sear the pork in a hot pan for a few minutes per side after roasting to create a beautiful crust (or sear first, then roast).
  9. Let pork rest 5–10 minutes before slicing.
