Apricot crisp summer dessert

A flavorful fruity dessert using fresh apricots, vanilla and almond extracts and cinnamon. Bottom crust and top made with flour oatmeal and butter. Perfect for summer entertaining.

Ingredients
  

Apricot Filling

  • 4 C chopped apricots not peeled
  • 1/3 C sugar
  • 1 tsp cinnamon
  • 1/2 tsp almond extract
  • 1 tsp vanilla
  • zest 1 small orange

Crust

  • 2 C flour
  • 1 1/2 C rolled oats
  • 1/2 tsp kosher Salt
  • 1 C brown sugar
  • 1 C butter melted
  • 1 Tbsp corn starch

Instructions
 

Apricot filling

  • Chop apricots and place in a bowl.
    Add the sugar, cinnamon, almond and vanilla extract, orange zest
    Stir to combine and set aside while you make the crust.

Crust

  • In another bowl add the flour, salt, oatmeal, cornstarch, brown sugar and melted butter.
    Mix until combined.
    Press half of mixture into 9X13 pan.
    Top with apricot mixture.
    Sprinkle the rest of the oatmeal mixture over the top and bake in 400 degree oven for 35 minutes.
    Serve with ice cream
